The harvest season begins from mid November to mid January. The fruit is ripe when harvested from the tree. Black olives are very popular in foreign markets with names such as Black Amfissa, Agrinio Black, Black Volos depending on their place of production.

Black olives are very popular in foreign markets with names such as Black Amfissa, Agrinio Black, Black Volos depending on their place of production. The fruit of the black olive is round and not as hard as Halkidikis. The desalination takes place only in the presence of brine (salt water) and characterized by a bitter taste in the early days after their production and slightly salty the rest of the time.
